Wheat-rye bread with mayonnaise dressing.

Ingredients

Wheat flour 280g
Rye flour 200g
Leaven 260g
Salt 0.5h l.
Dry kvass 12g
Dark malt 12g
Honey 1 st. l.
Mayonnaise dressing + whey only 300g

Cooking method

  • I made mayonnaise dressing like this:
  • -2 tbsp. l. rast. (took olive) oil
  • -1 tbsp. l. lemon juice (replaced with a pinch of lemon juice)
  • -1 egg
  • -0.5 tsp mustard (powder)
  • -0.5 tsp salt
  • -1 tsp sugar (brown)

  • Whipped everything in a blender, then poured it into a measuring cup from Panasonic and added serum to 300 ml.

  • Well, then knead, rest 50 minutes, second knead, and in the form for proofing, baking at T 180 * C.
