Ingredients

Shortcrust pastry
wheat flour 250gr
butter 120g.
sugar 60gr
egg white 1 protein
salt pinch
Vanilla cream
milk 175ml
vanilla sugar 100gr.
egg yolk 1 yolk
sugar 30gr
starch 15gr
Almond cream
butter 60gr
sugar 30gr
almond 75gr
wheat flour 18gr
egg 1 PC
salt pinch
fresh apricots

Cooking method

  • For the test
  • Mix butter with sugar, egg, flour and salt. Knead a soft dough and refrigerate for 30 minutes.
  • Vanilla cream
  • 125ml milk, sugar, vanilla sugar, bring to a boil. At the same time, stir the yolk with the starch and the remaining milk. Add to boiling milk, stir. to thicken. Close the lid. Allow to cool.
  • Almond cream
  • Beat the softened butter and sugar. Grind almonds and mix with flour. Beat the egg with salt. Mix all the ingredients.
  • Mix vanilla cream with almond.
  • Roll out the dough. Distribute by forms
