"Chanakhi from vegetables" salad

Ingredients
Eggplant 2 kg
Beans 1 kg
Carrots 0.5 kg
Bolg. pepper 0.5 kg
Tomatoes 1.5 kg
Bulbs 3 pcs.
Garlic 200 g
Vegetable oil 0.5 l
Table vinegar 100 ml
Salt 70 g
Sugar 150 g
Dill, parsley to taste
Cooking method

1. Cut the eggplants into cubes, salt and leave for 1 hour. Boil the beans, grate the carrots on a coarse grater and fry with the chopped onion. Cut the pepper, tomatoes into wedges, finely chop the garlic.
2. Combine everything, add chopped parsley and dill, the remaining oil, salt. Pour in vinegar, add sugar. Boil for 1 hour. Roll up.
