Ingredients:
- 7 1/2 tablespoons butter (warmed to room temperature)
- 3/4 cup sugar
- 3 large eggs
- 3 drops of vanilla essence (approximately 1/4 teaspoon)
- 1 1/2 cups flour (sifted)
- 3 tablespoons rum
- 60 gr. dry cherries (chopped)
- 60 gr. raisins
- 15 gr. orange peel
- 1 teaspoon bicarbonate soda (sifted)
- 15 gr. marmalade
Cooking method:
- Place the oil in a heated container and stir.
- Add sugar and beat with a mixer until the whipped mixture is firm.
- Add eggs one by one and beat.
- Toss the flour and bicarbonate mixture using wooden spatulas. Add rum, cherries, raisins and zest with the flour.
- Place the resulting mixture in the container of the bread machine and prepare the cake in the CAKE mode, following the instructions.
- Brush the top of the cake with marmalade.
