I love salted lemons, maybe someone also has such a passion. Very tasty, juicy and quick. Such lemons can be used in canapés on skewers, in conjunction with cheese and olive (olive).

Wash the lemons well.

Chop coarsely. I cut into 4 pieces, and then remove the bones in pieces 1-1.5 cm thick.

Place the lemons in a clean glass jar. And we prepare the brine:

Boil water, dissolve salt and cool.

Fill the jar with our lemons with cold brine up to the "shoulders".

Pour olive or sunflower oil straight up to cover the lemons.

The oil is lighter than water and will collect at the top, obstructing air access to prevent our lemons from growing moldy.

Such lemons are stored, if all of the above conditions are met, at room temperature in the kitchen. It is better to cover the jar with a loose lid.

You need to get it out with a dry, clean spoon or fork and make sure that after manipulations, there will again be a layer of oil on top.

Otherwise, your lemons will quickly become moldy.
Lemons can be eaten almost immediately, after an hour I already tasted them.

Over time, elasticity is lost, they become softer, but they do not lose their taste.
