Rinse the flowers, remove the pedicels, allow them time to drain and cover with warm water, boiled with sugar. Add lemon (well peeled or not chemically treated), cut into circles, you can also with the skin (or peeled), removing the seeds, and rejuvenated wine yeast. Leave the bottle covered with gauze to ferment for a week.Then drain the liquid through a hose, strain it and put it back for fermentation, closing the vessel with a fermentation valve. Elderberries have
diuretic and mild laxative effect. Elderberry dishes and drinks are recommended for diseases of the cardiovascular system, kidneys, and constipation. Jelly, jam, marmalade, mousse, drinks, jam are prepared from elderberries. Moreover, the medicinal properties of the plant are preserved.
• 2 tbsp. l. dry berries
• 5 tbsp. l. honey
Pour berries with a liter of water, add honey, boil for six minutes, drain. Drink preferably hot several times a day.
Bath 2 tablespoons of raw materials (dried leaves, flowers, elderberry roots) pour a liter of boiling water, leave for 2 hours. Strain and pour into a bath (its temperature should be 36-37 C). Take a bath for two weeks. After a two-month break, you can resume the course.
Tincture Before going to bed, 15 minutes after the bath, it is advisable to drink 30 ml of elderberry tincture (1 teaspoon of flowers or buds is infused in 250 ml of vodka for 7 days). Take within 2-3 weeks. After a 2-month break, you can repeat the treatment.
Jam For a kilogram of berries, you need to take the same amount of sugar and 1/5 of a glass of water. Peel the berries from twigs and stalks. Grind, add sugar and water. Cook until thick.
The juice• 1 kilogram of berries

When the elderberry begins to bloom (all flowers should bloom on the umbrella), cut off the flowers. You can make a large dish using a tureen, or you can make small individual portions. Use any fruit other than pineapple and kiwi - they will not solidify the jelly.
• 8 baskets of different berries (blackberries, raspberries, strawberries, blueberries)
• 4 plates of gelatin
• 140 ml elderflower syrup
• 2 tablespoons of fine granulated sugar
• 425 ml sparkling Italian wine, chilled
First of all, decide on the size of the jelly - will you go along the path of portioning or show the world one giant dish. If you decide on the latter, line the bottom of the tureen with cling film.
Place ripe berries in pudding tins (or tureens) and refrigerate. Place the gelatin slices in a bowl with a little cold water and let sit for a minute. Drain the water, and send the gelatin into a container along with the syrup. Place the container in a pot of water and simmer until the gelatin dissolves and a smooth syrup forms. Sugar can be added at this stage.Stir until melted, then remove from heat and set aside to cool for a couple of minutes at room temperature.
